Fit for a Duke ~ Mini Beef Wellington

Some say it was named after the Duke of Wellington and his love for the fusion of beef and mushroom. Others argue that it was named after Wellington, New Zealand. Regardless of naming origins, we all can agree that it’s a dish royal with flavor. Our skilled chefs whipped up Mini Beef Wellingtons with small medallions of beef tenderloin, topped with wild mushroom duxelle, wrapped in decorated pastry. They were baked until golden and served warm on a slate plater. Enjoy!
