Hors D’oeuvre ~ Roasted Veggie Tacos
A new hors d’oeuvre that is both delicious and vegetarian is the Roasted Veggie Tacos. Not lacking in novelty or taste, this tiny taco is filled with corn, zucchini, summer squash, cherry tomatoes, red onion, avocado and topped with cilantro and cotija cheese. It was served on an artistic wooden platter and passed with mini margaritas. Olé!
